Ingredients:
Ground Beef – 2lb (seasoned)
Onions – 1 – diced
Canned Corn – 1
Can of Red Kidney Beans – 1
Can of Chickpeas – 1
Tomato Paste – 2 Tbsp.
Crushed Tomatoes – 800ml
Diced Tomatoes – 800ml
Beef Stock – 500ml
Chili Seasoning – Nacho Taco Butcher Bro’s BBQ seasoning
Onion/garlic powder – 2 tsp
Recipe:
Prepare your meatball:
- Pre heat BGE to 250F using the ConvEggtor and expansion kit
- Season your 2lb of Ground Beef with salt, pepper, onion and garlic powder. Then form it into a giant meatball
Cooking Method:
- Place a cast iron pot on the lower level under the meatball then add your onions and tsp of oil
- Place your meatball on the top rack above the pot and allow the drippings to fall into the onions
- Once onions start to caramelize, add your diced tomatoes
- Let cook for 10-15 minutes then add your crushed tomatoes, corn, beans, and beef stock
- Let cook between 250F-300F until beefs internal temp reaches 165F
- Crumble the beef into your chili and season with Nacho Taco or Chili seasoning to taste
