Chicken Shawarma with Big Green Egg

Discover how to make chicken shawarma on the Big Green Egg for smoky, tender perfection. This dish pairs perfectly with warm pita, fresh toppings, and flavorful sauces for a festive feast everyone will love. Let’s fire up the Big Green Egg and create this Middle Eastern-inspired masterpiece!

Ingredients: 

Large Onion – 1
Lemon – 1
Garlic – 2 Tbsp. – Minced
10-12 Boneless Skinless Chicken Thighs
Olive Oil
Yogurt
Pickles – Thin sliced
Diced Tomatoes
Pickled Onion
Cucumber – Diced
Chopped Lettuce
Crumbled Feta
Tzatziki Sauce
Pita Bread

Tools:

Cast Iron Pan
2 Large Kabob Sticks
4’ Butchers Twine

Yogurt Sauce: 

 Combine: Minced Garlic - .5 tbsp. / .5 Cup of plain Yogurt / Half a lemon squeezed / 1tsp Cumin 

Salt & Pepper – to taste

Recipe: 

Marinate the chicken

  • For your marinate, mix equal parts Paprika, Coriander, Cumin, Salt and Pepper then add ½ tsp of Cayenne and freshly squeezed lemon 
  • Add your chicken and marinate to a bag and leave it in the fridge for 2-6 hours

Prepare the BGE:

  • Fill with Oak & Hickory charcoal 
  • For setup add the conveggtor but no grill
  • Preheat the egg to 320F

Prep the tower

  • Square off the large onion for stability
  • Peirce the kabobs sticks through the bottom 
  • Place the onion on the cast iron pan with the sticks facing up

Layer the marinated chicken

  • Taking the marinated chicken from the fridge, start layering it on top of the onion piercing it with the kabob sticks to make a tower
  • Place the cast iron pan on the conEggtor. Cook until internal chicken temp hits 175F

Prep Pita

  • While the chicken is cooking. Prep your pita with Tzatziki, Yogurt Sauce, Lettuce, cucumber, pickles and pickled onion. 

Shave the chicken

  • Once you have everything prepper. Shave off the cooked chicken into the bottom pan and layer it into your pita. 
  • Roll up your pita and enjoy.
